Chicken is an interesting meat to match with wine. It is a fact that red and white wines can be equally good with it. A lot depends on how it’s cooked, of course. Barbequed chicken calls out for a robust red but steamed chicken would go well with a Sauvignon Blanc. Roast chicken needs a rounder white or a light red, for example a red or a white Burgundy.

My favourite white wine to go with roast Chicken is Chateau Cabezac ‘Les Capitelles’, a wine from Minervois, the excellent Languedoc appellation. This wine is a blend of southern France grape varieties Rousanne, Maccabeu, and white Grenache. The Rousanne is fermented in oak and this helps to give the wonderful complexity that this wine has. The overall roundness and richness of the wine combined with the roast chicken is absolute heaven.
